  3. 03

In a wok over high heat, fry the garlic, ginger and green chillies for 30 seconds until fragrant.

  4. 04

Add the onion and capsicum and stir-fry on high heat so they stay crunchy.

    ⏱ 2 min

  5. 05

Add the soy sauce, chilli sauce, ketchup, vinegar and sugar. Pour in the cornflour slurry and stir until glossy and thick.

  6. 06

Toss in the crispy paneer, coat quickly, and finish with spring onion greens. Serve immediately, before it softens.

tips

  • →Pat the paneer completely dry before battering; wet paneer won't crisp.
  • →For a gravy version, double the sauce and add 1 cup of water with the slurry.
  • →Air fryer option: 200°C for 10–12 minutes, shaking halfway.
